Chef Robert is a classically trained chef that has spent the majority of his life on the line of some of Chicago's best Michelin stared restaurants. Mirepoix Gangster Kitchens is his approach at modern fine dining bringing you the precision, excellence, and unique culinary experience you would find only in some of the best restaurants in the comfort of staying at home.
Chef Robert started cooking at a very young age, he helped his mother in the kitchen when he was so young that he couldn't even reach the kitchen counter. Food was always a large part of his life and as soon as he was old enough to get a job he started bussing tables in a small Italian restaurant in Neenah Wisconsin where he eventually worked his way up to be a prep cook. Right out of high school Chef Robert moved to Chicago IL to attend culinary school at Kendall college where he was trained in classic french cuisine. He then interned at BOKA restaurant for 6 months where he was first exposed to fine dinning, he went on to work at multiple one Michelin starred restaurant continuing to grow and learn as much as possible from some of Chicago's greatest chefs, but he didn't stop there he then went to work at Sixteen restaurant where in his time working there was awarded two Michelin stars and Five stars from Forbes, He soon after was promoted to Sous Chef where with Chef Nick Dostals mentoring he was allowed to create dishes for Sixteen restaurant.
Chef Mitchell Robert is working on his dreams to one day open his own fine dinning restaurants and Mirepoix Gangter Kitchens is the start of his bright future.
